Beet, Seaweed and Avocado Salad

I love beets. Raw, roasted, juiced-I’ll take them anyway I can get them. To quote my sisters wedding toast, “anyone who knows Sara even a little bit knows that the great love of Sara’s life next to Doug, Maddie, musical theater, and clothing… is beets. “ You can imagine my delight in finding a beet salad in paradise on my honeymoon.  And yes, as soon as I knew they had beets in the kitchen I had them juice them for me each morning!

Beet, Seaweed and Avocado Salad

For Salad:

  • 4 large handfuls of baby mixed greens
  • 1 cup shredded, julienned or spiralized raw beets
  • ¼ cup dried wakame
  • 1 avocado cubed
  • 1 sheet nori ripped into small pieces

For Dressing:

  • ½ cup mellow white miso
  • Juice of 2 lemons
  • 1” piece of ginger
  • 2T sesame oil
  • water
  • stevia to taste
  1. Combine all dressing ingredients in a blender until smooth.
  2. In a small bowl, soak wakame in water for 5 minutes. Rinse and drain.
  3. Mix wakame with shredded beets.  Toss the beet/wakame mixture with approx ¼ -1/2 cup of the salad dressing.
  4. Place baby greens on a plate and top with wakame and beetsfollowed by the cubed avocado.
  5. Top salad with extra dressing.  Sprinkle with nori pieces.
