Pumpkin Spice Granola
Pumpkin spice season is in full effect. I have seen lattes, scones, muffins, you name it in the uber popular "PSL" flavor. My personal favorite way to enjoy pumpkin spice is my nut free Pumpkin Spice Granola. I first created this recipe three years ago to sell to clients and friends and at various holiday fairs. I've since stopped selling it but still enjoy making it for myself and as a gift for friends. The recipe is super easy and the results are completely delicious. I suggest doubling or even tripling the recipe to have enough on hand for all your "PSL" cravings.
Pumpkin Spice Granola
- 1/2 cup sunflower seeds
- 1/4 cup pumpkin seeds ( unsalted)
- 1/2 cup chia seeds
- 1 cup shredded coconut
- 1 T coconut oil melted
- 2T maple syrup
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp clove
Preheat oven to 350. Combine all ingredients in a bowl, spread on a parchment lined baking sheet and bake for 20 minutes. Allow to cool completely before eating.
