I received the following email from a girlfriend today: Subject: today is international chocolate day

I am slightly ashamed to report there is currently ZERO dark chocolate in my apartment. I stopped buying dark chocolate bars a few months ago, and have only indulged in them here and there since. However, it being an international holiday I feel like I need to celebrate. This Emergency Chocolate is fast and easy to whip up. With just three ingredients, and a few minutes in the freezer International Chocolate Day may just be saved! I know, I know I could just go out and buy a bar of dark chocolate...but this is so much more fun!

For a variation you can add a sprinkle of sea salt to the mix. Salted dark chocolate = heaven!

Emergency Chocolate

  • 2 T coconut oil
  • 2 T coco powder
  • 5 drops liquid stevia
  1. Make sure your coconut oil is in it's liquid form. If your jar is solid simply run under hot water to liquify.
  2. Combine all ingredients in a small bowl. Adjust sweetness to taste.
  3. Spoon the mixture into baking cups (the silicone kind work great here)
  4. Place in freezer for 10-15 minutes to solidify.

These are best enjoyed immediately out of the freezer as they will melt quickly! They can be stored in the freezer indefinitely.
